About ten years ago, I dramatically changed our eating. Harry was five and struggling with ASD and I decided we would work with some dietary changes. We made huge strides and kept it up for a few years until I divorced. It was a struggle to keep it all up so my striving was for balance. Erik joined us and was completely on board with eating better. Over the last seven years, life has taken many twists and turns for us. We decided that our journey back to balance would have to be fun in order for it to stick. We will be chronicling it on our personal blog, but we also want to bring some great recipes here. My intent is to also bring favorites of others here too. A virtual Waldorf family cookbook.
Last night was a garden feast! We just joined a CSA when we moved into our new place and the bonus is the coordinator lives just across our common path. I am determined that on our path back to getting balanced, we will not waste what she brings us! Now I have been far from perfect in this goal over the last month, but I am trying. Last week we got a bunch of savory, basil and tomatoes and Grandpa brought us some potatoes from his Idaho garden.
I started with a couple pounds of potatoes, cubed.
Added these pretty guys. Cut up.
The basil made my kitchen smell amazing! Jacob remarked that it smelled like Sharon’s kitchen (she runs the CSA) I took that as a compliment! I am determined to smell like Sharon’s kitchen often!
I chopped a good amount, easily a cup before chopping. Thank heaven for the mini chopper! Drizzled it with a few tablespoons of yummy olive oil and then put it in a roasting pan. 400 degrees for about 40 min. Less if your potatoes are small chunks. Turn them about half way through.
We took it to our weekly potluck and they were snatched up fast!

My son’s fave is champ…..an Irish mashed potato. Just boil 5 pounds potatoes (I need leftovers). While boiling, chop one bunch scallions (green tops, too) and put in a small saucepan with about 1/3 cup butter and melt butter. Add about 1-1/2 cups fresh milk and celtic sea salt (around 1 tsp) and warm. Drain potatoes when done and cover in pot with a dish towel to keep warm and to soak in steam. After a few minutes (so some of the water gets out of the potatoes) pour scallion mixture over potates and mash. Taste and season with more salt and/or butter and if too thick, add milk gradually. Serve with extra butter and sea salt. Delicious!!
