Favorite Muffins: Waldorf Family Cookbook

 

I feel so blessed to live in our new community!  We have a great CSA that is really helping us get back to where we want to be with our eating, it is such a wonderful journey! Last week we got peaches and nectarines in our share. They were perfect for this muffin recipe.  This recipe comes from my friend Sharon that runs the CSA. Her CSA is so cool, they use the back yards of locals to bring the CSA to everyone.  I just love it.

I am eager to share these muffins, they were so good.  I discovered you don’t have to use peaches, you could probably use just about any jam or soft fruit.

 

Oat Peach Muffins
1 cup oats
1 cup buttermilk
1/4cup vegetable oil
2 tbsps light molasses
1 tsp vanilla
egg
3/4 cups all-purpose flour
1/2 oat flour
1/4cup peach (fresh, inch pieces)
1/4cup chopped walnuts (coarsely)
1/4cup brown sugar (packed)
1 1/2tsps ground cinnamon
1 tsp baking soda
1 tsp baking powder
1/2tsp salt
Preheat oven to 400. Mix together oats and buttermilk in a large bowl, then beat in oil, molasses, vanilla and egg. Stir in remaining ingredients until flour is just moistened. Divide batter into cups and bake for 20-25 min until cooked all the way through. Remove from pan immediately to cool.

    mm, these look good. My favorite is pumpkin muffins. They can be made with regular flour or gluten free. My fav variation is using molasses cloves & dark choc chips. yum!

  3. I was excited to find your blog! My husband and I love the Waldorf schools and actually have taught art classes at a few of the schools in Washington state. We live in Utah now and are looking for a Waldorf school in the Salt Lake or Utah Valley area. I was wondering if you might know of any? We would love to teach art classes at a Waldorf school if we could find one.
